Touring my Vegetable Gardens

Since we were on vacation, our garden has exploded! There is so much greenery in one little space, I can't wait to see some tomatoes growing! I took some photos just to give you an idea of my second family I have growing outside our home.

Just a side note: I did not weed before I took these photos. Oops!

Here is a couple of zuchinni plants that have really taken off and doing really well:

Here is a side shot of our green pepper plants. We were only able to fit three of the pepper plants in our garden, so I'll show you another picture further down this post to where we planted the rest of the pepper plants. We are going to have a TON of green peppers, so if you need any later this summer, don't hesitate to ask for some!

And there is a random basket of plants growing in the garden as well. It was a quick spot to place them where I knew they would get lots of sun. We'll see if they grow better there.


And here is a view of our cucumbers and collard greens. I've never grown cucumbers before, so I'm thinking I might pickle them. We'll see how that turns out. If you're not familiar with your veggie plants, the cucumber plants are in the bottom part of the photo.


Pictured below is our spinach and cherry tomato plants. They are really doing quite well, and the spinach is almost going to seed. So we'll need to cut those down and I'm thinking that we're going to be freezing ALOT of spinach!

Pictured below is our amazing peas that have really come through hard times. When they were about 5 or 6 inches tall, these little birds were eating their leaves. Almost all the leaves were gone, and they looked like sticks. That's when I researched what to do.

I tried cayenne pepper, but that didn't work, so then I tried hanging CDs above the plants. This way it made the birds think that there was someone there, and the reflection scared them off. It worked!! And now our peas are doing great! Look how many there are! And I can't remember what type of pea we planted, but I think they are snow peas. YUM!




Here are some Roma tomato plants that I got from my neighbor in exchange for some cherry tomatoes we gave her. She started her seeds with miracle grow soil, so hers were humongous when she gave them to me in early May. Now they are starting to form tomatoes.



Here are some green onions that I put in the ground after we didn't use some from the grocery store. They still had roots on them and they are growing so well. I'm surprised, actually!


More green pepper plants. We had so many grown from seed, that we didn't know where to plant them all. So we turned some soil at the other end of our yard, throw some good compost in there with the dirt and here they are.

I'm actually surprised that they're doing so well, because they are in mostly shade throughout the day and only getting a couple hours of sun in the morning and in the evening.

Funny story, our compost pile had some cut up rotten potatoes in it, and look what popped out of the ground one day. I thought it was a weed, so I pulled it up, and up came the potato linked to the plant. So I put it back in the ground and we'll see in the Fall if anything comes of it.


Here is our "herb" pot. There is chives and basil growing in it, along with a Huge tomato plant that happened to start growing in it. I did not plant it there. But it's got yellow flowers forming on it, so we'll see what we get!

And our lonely green bean plants. Only two out of the whole packet of seed grew, so they're slow coming, but we've already gotten two beans from them, so they're safely stored in our freezer for later produce.

Wasn't that fun, getting a tour of our veggie plants? There's so much to keep track of, but I'm learning new ways every day to keep the weeds at bay. For example, the other night I learned that if you lay wet newspaper down in between your plants, and then cover them with some sort of mulch, it will keep the weeds down! Brilliant! So I did that this afternoon with some veggie plants. We'll see if it works!

Grocery shopping this week = $38.31

We only shopped at County Market this week because they had some pretty good in-store coupons that we definitely used. We were excited to see the BOGO (buy one, get one free) coupon for all their berries! We only got the blueberries, because the boys eat them like they're going out of style! So each carton equaled out to $2 each (which is great for blueberries!)

We almost never buy shrimp since it's so pricey, but they had a coupon for this item as well. My favorite meal with shrimp, in case you were wondering, is Fettuccini with Shrimp, from the Olive Garden. YUM!

The cereal was $1.24 with these coupons. Which is a great deal, because we were running low on cereal.

We are pretty stocked in our freezer with meat and our pantry is full of pasta, so we didn't really need to stock up on anything except snacky foods. All in all, our total came to $38.31. A couple dollars under budget! Woo-hoo!

Cruise Pictures!


For those of you who didn't know, my husband and I took a little vacation on a Carnival Cruise! It was mainly to celebrate our 7th anniversary, but I think it was more just to get away from our everyday routine and really appreciate what we have and the family we have.

We had a blast and enjoyed every minute of it. It was our first ever cruise and everyday we found a new part of the ship that we had never seen before. There was food available every time of the day and lots of soft serve ice cream that could cool you down after soaking in the sun.

Our cruise ship was headed to Cozumel, Mexico. Where my husband and I signed up to enjoy kyacking in see-through kyacks. We also did a little snorkeling and saw some pretty cool fish. We even saw people playing with dolphins!

There were 4 pools on the ship, and we were surprised when we jumped in them that they were filled with saltwater! I guess that makes sense, since we were traveling in saltwater.


I had the best meal ever on the ship. My husband makes fun of me because it was a traditional steak and potato meal, but seriously, the meat was cooked to perfection and there was hardly any fat on it. And it was served with some tasty veggies. I think overall it was just a treat to not have to cook for 5 days!

So, if you can afford it, I would recommend taking a cruise someday. It's really an adventure I'll never forget.

Beef Barley Soup/Stew


My mom gave me this recipe and we love it here, especially my two little boys. And it's chuck full of vegetables! I thought I'd share it here on my blog before I forget to. Try it, you'll be pleasantly surprised!

1 lb. beef stew meat
3 cans beef broth
2 tsp. garlic powder
2 carrots
4 peeled potatoes
2 stalks of celery
1 medium onion
1 box quick cooking barley

Put stew meat in slow cooker - you can also take the meat directly from the freezer to slow cooker. Sprinkle with garlic powder. Pour beef broth into slow cooker, cover and cook on high for about 5-6 hours (or until your house starts smelling yummy!). Take the lid off a couple times to break apart the meat and give it a good stir.

Next, cut up carrots, dice up the onion, celery and cut up potatoes. Heat water in large pot to boiling. Add vegetables and cook until almost tender, because you will need to cook the barley with the veggies, and then the veggies might get too soft.

I cover the pot and set the burner on low till veggies are almost tender. Now add about 1 to 1/4 cup quick-cooking barley to the pot of vegetables. Cover again and cook till barley puffs up and is tender.

Turn the slow cooker on "low" and taste the beef broth in the slow-cooker. If it has a bland taste, add some beef flavoring. I like to use beef soup base. Add about 1 Tbsp. at at time, till you get a good solid beef taste. Now drain your veggies and barley and add it to the stew meat and broth in the slow cooker. Stir gently and taste. Let simmer together in the slow cooker for maybe 15-20 minutes or so. Enjoy!

Touch A Truck Day

Our Park District does a great job and having free events throughout the summer here in Champaign, and we take full advantage of them! This past Wednesday my boys and I walked to a nearby park and there were several trucks parked in the grass where kids could wait for their turn to "drive" the trucks. It was a hit, let me tell you!

Grocery shopping this week = $39.02

Look at all those fresh fruits and veggies! Our first CSA (Community Shared Agriculture) pickup was yesterday!! My husband and I signed up to receive a half share of the crop through a local farm nearby. We also signed up to receive fresh eggs. I'm excited to see what recipes we'll use these ingredients for. I got to go grocery shopping by myself this week, while my husband watched the rowdy boys at home. It was a nice break! I decided to do the shopping a little earlier this week, because my husband will be gone with the car starting tomorrow till Saturday.

I also broke up the shopping with going to Meijer a little earlier in the week to pick up a couple cheap items (with coupons, of course!) So pictured below we got for $2.00:


It looked like a good week for meat at IGA this week, so we got quite a bit of meat that we don't usually splurge on. This will last us for quite a while, I'm sure. I also picked up a lot of veggies to help make meals with our CSA products. Pictured below was purchased for $18.49.

Pictured below are some items that I found on clearance at Schnucks. The Stir Fry and chips I paid full price for. Total spent here was $7.16.

I was mostly excited about County Market's deals this week. We've been running low on my favorite popcorn (O.R. Tender White popcorn) so after seeing a coupon in 5/16 inserts, and that it was on sale this week, that I needed to stock up on it! I got each box for $1.25. (Which is great because it's usually over $3!!

The Wacky Mac was $1 this week, and I had a couple coupons for $.50 off. The spices were totally free because they were a $1 and I had 5 $1 off coupons. The Mac and Cheese was free too, because I became their fan on Facebook. Total spent on the picture below was $11.37.


So total spent was $39.02. Which is great! How did you do this week?

Salvation Army Finds = $12


On a whim, I took Pudge with me to the Salvation Army store on John St. here in Champaign. I was glad that we stopped in because they were having a sale on their kids clothing. All items were 50% off!! I am always on the lookout for boy toddler clothing at garage sales, so this was an even better deal. Here's what I found for a total of $12:

All the kids clothing was $0.75/each.




My belt that I've been needing oh so badly cost $0.75.

And I also found a cute windbreaker for only $2.50.

So overall, not too shabby day at the Salvation Army store!

Super Power Muffins


A number of people have asked for the recipe I snagged from Money Saving Mom for Super Power Muffins, so I'm making sure that I post it here on my blog as well. These muffins are so delicious, that I don't feel guilty whenever my boys ask for seconds on these sweet things. They are made with some great super foods: whole wheat flour, bananas, applesauce, and peanut butter. So gather those browning bananas and get to work!

Super Power Muffins
1 c. brown sugar
1/4 - 1/2 c. peanut better
1 banana
(optional) 1/2 c. apple sauce or carrot puree
1 egg
1 c. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
(optional) 1/4 c. chocolate chips

Preheat oven to 350 degrees. Mix all dry ingredients well and set aside. Blend everything else and then sift in dry ingredients. Spray muffin tray and bake for 15-18 minutes. Makes 12 large muffins.

We've been busy being hosts!

This past week has been filled with lots of family visiting and lots of photos! I thought I'd share some of the with you.

The beginning of last week we had my husband's extended family over for 4 days. They drove here all the way from Arkansas! With two toddlers, none the less! And we had other family from Springfield and from California. The picture above is all the boys that got to hang out and get to know each other better as cousins.


We also were hosts to my sister and her little baby girl for a couple days, after our other family left.

They all thought it would be funny if they tried to fit into her carseat!
