The boys and I went to the Farmer's Market today and we were a little skeptical of what we would find. You see, we had forgotten that the Health Department gives out Farmer's Market Coupons to those on the W.I.C program. And we had forgotten about them until now. And we had quite a few coupons left that expired on Halloween....so off we went to see what we could find. It turned out to be a pretty productive visit!
We got a TON of tomatoes (which I had no idea were still in season), a bunch of green peppers, a handful of green beans, acorn squash, butternut squash, and 6 baking pumpkins! (the other pumpkins are not pictured, because I'm using them to decorate outside until I'm ready to bake them).
I'm not quite sure how we'll end up using the squash, any ideas of what you like to use them for?
I cut the acorn squash and set the cut side down in a dish and microwave until soft with a little water in the bottom. Then flip and put some butter and brown sugar in each side and broil for a couple minutes- so yummy :)
ReplyDeleteI've recently had some friends noting that they have made great butternut squash fries. You may think about looking for a recipe to do that.
